If not, you can just pretend. That's what I do. Ha!

The amazing thing about making Italian-inspired recipes is that they really CAN taste authentic even without cooking. Throw in sun-dried tomatoes, fresh basil, and some olive oil (or maybe even just OLIVES!), and really seriously it just FEELS Italian!

So I know that zucchini (our base for lasagna) isn't the same thing as lasagna sheets, and there's not even gluten in it, but it works like a charm!

My husband actually IS (half) Italian, and when I make Italian dishes, he adores them. Even if there is green zucchini pretending to be pasta!
