1.3 - Raisin Walnut Truffles [recipe]

This is so decadent that people often can’t believe it’s raw, yet it’s one of the quickest and easiest desserts to make, ever. It can be such a lifesaver to just grab a truffle when you need a touch of sweet indulgence.

Ingredients

✦ 2 cups walnuts
✦ 1 1/2 cups raisins
✦ 1 vanilla bean or the equivalent in crushed vanilla
✦ 1/8 tsp sea salt
✦ 1/4 Tbsp cinnamon

Instructions

1/ Put 1/2 cup walnuts in a food processor until well chopped but definitely not powdery or an oily and gooey mix. Keep some texture to them. Set aside in a bowl.

2/ Put the remainder of the walnuts and other ingredients into the food processor. Keep processing until this mix starts to form a wonderfully oily glob of a ball.

3/ Hand roll this mixture into separate balls 1/2 inch in diameter. Roll the balls around in the chopped walnut mixture.

4/ Share! And make sure when people are mmm-ing and hmmm-ing that you inform them that this is actually a health food! (Yes!)

Recipe Variations

Mix in some cacao powder, then roll in cacao nibs. Mix in other spices. Mix your dough with some coconut flour or almond flour to make donut holes (Thanks Kelli Flores for the great idea in class!). Roll in other nuts, coconut flakes, or cover in maca. This is such a fun recipe to play with!
