4.2 - Pesto Pasta with Marinated Mushrooms & Parmesan [recipe]
Ingredients (pesto)
✦ 1/4 cup pumpkin seeds
✦ 1/2 cup olive oil
✦ 2 Tbsp apple cider vinegar
✦ 1/2 cup lightly packed basil
✦ 1/2 cup lightly packed parsley
✦ 1 tsp salt
✦ 2 cloves garlic, minced
PASTA: 4 zucchinis, spiralized
MUSHROOMS: 8 oz., cleaned and then sliced about 1/4-inch thick
Ingredients (mushroom marinade)
✦ 1/2 cup olive oil
✦ 1/2 tsp salt
✦ 1/2 cup packed basil
Ingredients (parmesan)
✦ 1/2 cup (unsoaked!) cashews
✦ 1 clove garlic, chopped and skin removed
1/2 tsp salt
Instructions
1/ Marinate mushrooms for 30 minutes to several hours.
2/ Blend the parmesan in a coffee grinder/spice mill,
and set aside.
3/ Food process the pesto and set aside.
4/ Spiralize the zucchini in a spiral slicer.
5/ Mix the spiralized zucchini with the pesto, then
6/ Serve with the marinated mushrooms and parmesan
on top.
