4.3 - Raw Alfredo [recipe]

2 courgettes (zucchini)
1 cup cashews
6 Tbsp sunflower oil
2 Tbsp nutritional yeast
1/2 Tbsp soy sauce alternative
1/4 cup water
1/2 cup walnuts
salt and pepper to taste


For the "Pasta"
1/ Peel the courgettes
2/ Use the peeler to make strips from the flesh of the courgette

For the Sauce
1/ Add all ingredients, except the walnuts, to the food processor and blend until smooth.
2/ Add the water slowly, until you get your desired consistency, then stir through the walnuts.
3/ Pour over the ‘pasta’ and mix thoroughly.
