1/ Start with a pliable veggie such as zucchini, squash, or cucumber.
2/ Lengthwise, cut it in 1/4"-thick strips using a veggie peeler or mandoline.
3/ At the very bottom of your strip, put a dip (of ANY kind!) and/or some veggies or even fruit in some cases. Then roll it up, and VOILA! Veggie roll-ups
